Abstract: This thesis begins with a description of the environmental and health effects of traditional cleaning ingredients. It continues with an introduction of the green cleaning industry and investigates alternatives to conventional cleaning products. Then it explores the benefits and costs of green cleaning for businesses, workers, and the environment, and explores green cleaning certifications ... read moreand standards. The next chapters cover a review of corporate environmental actions that have been undertaken in recent years, as well as the policy context for restaurant cleanliness, through city public health codes, and state and federal worker occupational health and safety. Later, there are interviews with purchasers and decision-makers in the restaurants. These interviews revealed a strong dependence on the use of an environmental consulting firm for recommendations on which environmentally preferable cleaning products should be purchased and used at the restaurants profiled. Finally, the last chapter contains recommendations for other restaurants that want to engage in green cleaning.
