The next chapters cover a review of corporate environmental actions that have been undertaken in recent years, as well as the policy context for restaurant cleanliness, through city public health codes, and state and federal worker occupational health and safety. Later, there are interviews with purchasers and decision-makers in the restaurants. These interviews revealed a strong dependence on the use of an environmental consulting firm for recommendations on which environmentally preferable cleaning products should be purchased and used at the restaurants profiled. Finally, the last chapter contains recommendations for other restaurants that want to engage in green cleaning.
