Abstract: Food hubs address key issues of scale and infrastructure in alternative food systems development. Prior research has focused on describing and classifying food hubs to understand the existing landscape at particular points in time. We know less about the process of designing and developing food hubs. This research uses interviews with twelve well-established food hubs to investigate the ... read morefactors involved in decisions about their work, structure, and governance; the relationships among their choices; and their development over time. These hubs were created to address constituent needs and to support particular missions and values. Over time, they continued to make decisions based on their constituents' needs and founding principles. Their decisions also took into account their capacity and financial considerations such as funding sources and profit. Initial decisions affected their later choices by limiting options and/or determining priorities. This research provides recommendations for food hub founders, funders, supporters, and researchers.
